Pesto Pasta with Chicken Recipe

It’s currently Wednesday night and I am sitting on my back porch with a glass of wine watching the storm outside. Aaron and I just cleaned up dinner and I packed him breakfast and lunch for tomorrow (well, today haha) I love nights like this. First of all, a glass of wine makes any night better, but the storm is just so cool to watch. I have always loved storms, and am usually the one who is most excited when they call for them. There were many times I would head outside to the covered part of my deck at home and just watch the lightening with my mom. Now, I am doing it inside my screened in porch. There is just nothing quite like the rumble of thunder and lighting in the air! Speaking of, a huge rumble of thunder just occurred!

Aaron and I are settling into life at home. We have many projects to keep us busy, but we are enjoying doing them together. We now have an entry rug and a rug for our living room, and curtains! It makes the feel of the room so different; it is much homier if you ask me! I will post some updated pictures as soon as the mess is put away! We received some great wedding gifts, but they are still piled in our living room. Whoops!

We are also in the final stages of finishing the bathroom! I don’t believe I posted a picture, but it had this hideous wallpaper that actually peeled off. Of course Aaron did that the first day we bought it! And since then, we have had the fuzzy glue still on it, along with disgusting mix of colors. You might wonder what is taking us so long, but it is an older home and (you might remember) had no outlets in the bathroom! When my dad put one in, it was a few weeks in, and I was over my painting stage! Now, I just want it done! Aaron removed all the glue and spackled it all on Monday. I am in the process of sanding now, and hoping to paint today!

After eating a lot of food I typically wouldn’t on the cruise, I have tried to make healthy meals and include more fruits and veggies because I definitely lacked on that while on the cruise. Monday night I made chicken, broccoli rice, and a side of broccoli (broccoli is one of the only veggies I like!) It was perfect for us. We needed a good chicken dinner to start resetting our hunger palates! Haha

Aaron and I just got the pictures uploaded (haven’t looked through them yet) but we have approximately 1965 pictures from our honeymoon! I hope to get some posts up in the next week, but I have to look through them all first! Haha I also heard that we should be getting our wedding photos at the end of next week! Eeek!! So excited for those!

Last night, I made one of Aaron’s favorite pasta meals and of course I wanted to share it with all of you! It is so simple to make, and can make excellent leftovers if you wish!

Pesto Pasta with Chicken

1 1/2 cups penne noodles (uncooked)

1/4 cup pesto

1/4 cup parmesan cheese

5 oz chicken (either cooked and cut up or the canned chicken is what I used)

ingredients for pesto pasta


1. cook pasta according to instructions

2. while pasta is cooking, cook the chicken on the stove in a frying pan. You can definitely use more or less chicken, or omit if you wish! This was the first time I added chicken, and we were both a fan. Extra protein never hurts


3. drain pasta when it is done cooking

4. Place in a bowl, and top with your chicken

5. add cheese and pesto on top

7. serve

Aaron and I had ours with a veggie platter with hummus and ranch dressing, fruit, and a slice of garlic toast. It made for one yummy meal, and kept us quite full as well!

It’s always been one of my favourite things to do, and I remember my mom yelling at me when I was younger because she was afraid I’d get hit by lightning or something 😆 Silly moms…

      So silly. It actually cracks me up when people are afraid of them. I dont know how everyone doesn’t think they are fascinating and so fun! Love love love going to sleep during a huge storm. Then I get mad I miss it all when I wake up the next morning! lol

  6. Mmm chicken pasta and pesto is one of the best dishes around! I’m going to be printing this out for joe to recreate stat 😉 although i actually think this might be one i could handle too! Summer storms are the best…i was super bummed we didn’t get a bigger one last night 🙁 i love that you pack Aaron’s breakfast and lunch, too..:absolutely adorable 🙂 I don’t know that joe would ever let me do that haha (probably because he knows he’d end up with pancakes for lunch and he’s weird and doesn’t like them nearly as much as i do), so I’m glad Aaron does!       You could definitely make it! I promise it is that easy 🙂 Or, perfect for a night when you have people over! I made this for the Superbowl a few years ago and everyone enjoyed it. I am always bummed when the storms aren’t as bad as they say they will be! Ha add that to when they say snow storms are going to close roads, and we get 1/2 inch lol those weathermen! Pancakes for lunch.. who wouldn’t want that?! Oh Joe, get with the program 🙂

    I love watching storms as well. Especially when the rain comes down really, really heavy afterwards, or when they’re in the middle of the night and the lightning lights up the whole sky for a split second. Mega adrenaline rush!!!
